The beauty and the bar

A lively crowd gathers around Amie as she pours drinks at the quintessential Hawaiian bar—Duke's. She introduces herself to every guest because, as she says, "I want to feel like I'm at the bar with friends." Sunday is the peak of the Duke's Barefoot Bar experience: Henry Kopono plays against the backdrop of koa wood and historic surfing photos, and occasionally Jimmy Buffet makes an appearance...

DISAGREE?

Michelle

Pearl Ultra Lounge
Spiderman
With a cocktail menu created by Francesco la Francone, the mixologist behind Tabu at MGM Grand, the lounge brings the glamour of Las Vegas to paradise. An aspiring model, Michelle adds a hint of her own style with a drink she calls Spiderman, served as a shot or on the rocks: Stoli Blueberry, Pama liqueur, a squeeze of pomegranate syrup, and a splash of 7-Up.

Rob

The Green Room & Opium Den at Indigo
Mandarin Cosmo Blast
Chinatown's Green Room & Opium Den—adjacent to the restaurant Indigo—is a trendy haunt popular with downtown professionals, with its sultry Asian-inspired décor, DJs and live music. For the Mandarin Cosmo Blast, Rob squeezes fresh lime and orange juice with Skyy vodka and lime grenadine.

DISAGREE?

Lacy

Nextdoor Cinema Lounge
Smartini
More of an eclectic party spot than it sounds, the Nextdoor is as likely to be a dance club as it is to be a venue for cool cultural events. Bartender Lacy combines Pacific Kool ginger she buys from the farmer's market, Absolut Pear, lemonade, a splash of sour, and 7-Up in her signature drink, the Smartini.

DISAGREE?

Jaci

Jacques Bistro
Love in a Bucket
On Fridays, head to Paia in the Maui upcountry to join sunkissed surfers and beach beauties at Jacques as a DJ spins world music. The party attracts tourists, pro windsurfers and Paians, who pack into the rustic bungalow to dance the night away. Jaci serves up Love in a Bucket: four flavored vodkas and a blend of juices served in a big, globe glass. The drink is as strong as a Long Island Iced Tea and you will only be allowed two.

DISAGREE?

Gavin and Alana

The O Lounge
Chocolate Covered Cherry and Raspberry Lemon Drop
The O Lounge claims the longest bar in Honolulu, which gives sexy bartenders Gavin and Alana the perfect stage for frisky role-playing and other shenanigans. The expansive space hosts both low-key events and themed parties that delve into hedonism. Both took top awards at Honolulu's first International Bartending Competition. The Chocolate Covered Cherry, an indulgence of vodka, sake, grenadine and kahlua in a chocolate-rimmed glass, earned Gavin first. Alana snagged second with a citrusy, layered drink called the Raspberry Lemon Drop.

DISAGREE?

Amie

The Barefoot Bar at Duke's Waikiki
Afternoon Delight
A quintessential Hawaiian beach bar, Duke's Barefoot Bar embodies the native aloha spirit. Sidle up to the bar from the beach and Amie will shake up an Afternoon Delight: mandarin vodka with a splash of cranberry and passionfruit juices, sweet and sour; juice from fresh lime and orange slices and a hit of 7-Up.

DISAGREE?

Matt

The Wonderlounge at The W
Strawberry Long Island
Just off the Waikiki strip at Kapiolani Park, the Wonderlounge draws a mellow crowd for weekend partying in an upscale atmosphere. Ask Matt for a strong drink that goes down easy and he'll make a Strawberry Long Island, masking the various liquors with Stoli strawberry, strawberry passionfruit juice, and strawberry puree.

DISAGREE?

Ann

Thirtyninehotel
Berry Berry Drunk
The nightly scene at the whitewashed gallery space of thirtyninehotel resembles a chic rooftop party grooving to diverse music. As her signature drink, Ann names Berry Berry Drunk, an iced drink that tastes like blueberry lemonade and blends Grey Goose Citron, lemon juice and strawberries.

9
DISAGREE?

Hoang

Aaron's Atop Ala Moana
Mai Tai
A penthouse property offering sweeping views of Honolulu, Aaron's seems like two clubs, with a DJ at one end and live music at the other. The signature drink for Hoang is likely the signature drink of Hawaii—the Mai Tai—that dangerous union of pineapple juice, grenadine and rum that can spark delectable stories of paradise.

10
DISAGREE?

Mike

Paradice Bluz Nightclub and Lounge
the Blue One
On Maui, top reggae artists, rising indie bands, and eighties phenoms all play sets at Paradice Bluz. The swanky, retro club is the only underground nightspot on Maui and the only one that's not a restaurant hybrid. Mike's signature drink is the Blue One, a citrusy mix of Absolut Vanilla, Alize Bleu, Blue Curacao, lemonade and Rockstar. If you ask for the Blue One, be sure to ready yourself for a show—Mike's got special flair with a cocktail shaker.
